I saw this little survey on Peanut Butter Fingers‘ blog this morning and I thought it was so cute, that I just couldn’t help myself. I also thought it would be a great way to get to know me better. So let’s get into it!

Ok this was a hard one, and if you know me you knnow why. Picking just 1 song is like torture, but the first one that came to my head was En Vogue – My Lovin (You’re never gonna get it) or Michaell Jackson – Don’t Stop ‘Til You Get Enough.
2. What’s the best thing that happened to you last weekend?
Unpacking all these dang boxes and getting organized!
3. If you could have a starring role in any film already made, which movie would you pick?
Well I would love to be Ariel in The Little Mermaid, but my second choice would be Liv in Bride Wars

6. What was your first concert?
Easy. Jon Secada in an airplane hanger on a military base, AND it was free. My sister and her husband took me, I believe it was an air show. It was probably the worst concert ever, since an airplane hanger isn’t really known for its stunning acoustics. However, I loved it because it was my first concert ever! I think my brother in law was really hoping it would be Blue Oyster Cult.

7. What Internet website do you visit the most?
Gmail, with Pinterest as a close second. I have a problem, I know.
8. Which of Snow White’s 7 dwarfs describes you the best and why?
I would say Happy – I’m a pretty happy person most of the time. but I must admit that my inner Grumpy comes out at times as well. Just ask Ed.

9. If you were on death row, what would your last meal be?
Full on Thanksgiving dinner and a desssert buffet with a cookie sundae, cupcakes and a Dairy Queen blizzard. I’m a hungry girl, don’t judge!

Pictures of my Fall cupcakes, but it is soon to switch to a Christmas themed background….

Good evening! I am writing to you from sunny Puerto Rico! Although when I landed here this afternoon, it was cloudy and rainy, which I must say is a little uncharacteristic of the island. Usually the rain will come but will dissipate within a few minutes, but this rain lingered for most of the afternoon. Not that I have much time to go to the beach or anything – this is work trip as you know. In fact, out of all the times I’ve been down here in the past year for work, I think I put my toes in sand once. Yes, once.
Anyways, that is beside the point. I wanted to show you some pictures of some Fall cupcakes that I made for a Fall baby shower the other week. I had a lot of fun making them and they were quite delicious. (What? A baker must always sample the product – don’t judge me) I made some pumpkin cupcakes with cream cheese frosting ( a personal Fall favorite), an apple spice cupcake with apple filling inside and a simple yet delicious vanilla cupcake with butter cream frosting on top. The decorations were Fall themed, as requested by the client, but I still incorporated the letter “J” for the baby to make them a little more baby shower appropriate. Fall is my favorite time of year so I was thrilled to sample make these! And now, bring on the photos!

As many of you may know, I am constantly on the road for work and you know what that means – health and fitness is not my main priority. Or let’s just say it gets put on the back-burner. There’s no need to even mention how hard it is to eat a healthy meal at a restaurant when everyone around you is indulging like they are on vacation. Most of my team that travels with me only goes out occasionally, so for them it is like a vacation, but for me who is on the road every other week – that could add up to a lot of extra calories and dare I say it, a lot of extra pounds. (Which by the way, I have let that happen – but now it’s time for a change) I worked hard to lose all that weight and I am very disappointed in myself that I let work get in the way of that. I am back on track now, and just because it is hard doesn’t make it impossible. My health is worth it. So I thought I would put together some “no excuse on the road workouts”. There is no equipment needed and you don’t need a ton of space either. Let’s get into it…
I like to repeat this one a few times to get a quick sweat in, especially if I didn’t sleep well in the hotel or get up late. It’s a great way to get your metabolism going in the AM and it gives me so much energy during the day – especially because I sit on butt in a classroom all day.
Next week I will be in Puerto Rico so I will have to be very mindful of my diet there… they tend to feed us well or badly , but everything in moderation right? That is my new motto.

I have a new favorite smoothie. I shall call it the “Purple Peanut Butter Pineapple Smoothie Monster”. I was literally throwing things together that I had the other night when making my smoothie and something amazing happened.
Lately I have been feeling the smoothies, and I wouldn’t put it past me to have them a couple times a day. Maybe it’s the fact that summer is around the corner and I’m just getting ahead of myself. I have no idea, all I know is this one was a GOOD one. Here is the rough recipe, since like I said I was just throwing things in and not really measuring.
- 1 cup mixed berries
-1/2 cup pineapple
-1 cup greek yogurt
-anout 1 tbsp. of PB2 (Peanut Butter)
Blend it all up and enjoy!
I think I also like smoothies because they are healthy and don’t require a lot of effort, so there’s no excuse. Since this was my dinner, I also enjoyed some Snapea Crisps too for some Veggies. And MAN let me tell you – I love these things. I could eat a whole bag in 1 sitting. They are better then eating chips! Love them!

On another note, I wanted to talk about my mood lately. I am trying to keep super positive lately. Forgive me if I begin to sound like a self-help book here but bear with me. I have learned over my 27 years that negativity just clouds up your day and your life. And it’s not even about what’s going on in your life at the moment, you can choose how you feel and how you approach your day. It’s not what happens to you, it’s what you do about it. Think about that for a minute. I am so thankful and blessed to have the life that I have and that I have amazing support from friends and family. Living away from my family is hard on me, but I can still feel their support from miles away.
Just remember, You were given this life because you are strong enough to live it. I find inspiration in music and hope this song inspires you as well. And if there is negativity floating around you then just Shake it out….

Ok first things first. For some odd reason, I have had this song in my head since I woke up this morning and I have no earthly idea why. I can’t remember the last time I actually heard it, but my brain is sure stuck on it today. Thanks a lot Juanes.
I remember talking about this song in college in one of my Spanish classes and just how discreetly vulgar it is. But if you don’t speak Spanish, then you would’ve never known. You’re welcome.

Yep. that about covers it. There was no Cinco de Mayo fun in this household, no sir. My weekend was spent cuddled up with my boy Pumba, who is gradually becoming less and less camera shy. I mean but how could I not resist taking endless pictures of that little face?
Even if he does seem to get a little annoyed with me.
